Carnivore-Friendly Creamy Hamburger Soup
While my family doesn’t eat a strict carnivore diet, we love a hearty, meat-heavy meal. That being said, we also LOVE a warm soup where we can dip some crusty sourdough bread into. *Cue the mouthwatering. I hope you love this easy weeknight meal as much as we do!
INGREDIENTS:
2 lbs Grass-Fed Ground Beef
1/2 of a Medium-Sized Yellow Onion
1 Large Sweet Potato
3 Large Carrots
2 tsp Yellow Mustard
3 tsp Salt (we use Redmond Real Salt for cooking)
1 tsp Black Pepper
5 tsp Fresh Dill (or substitute 2-3 tsp of Dried Dill)
1 Tbls Ghee or Grass-fed Butter
3 C Bone Broth (Check out my simple Bone Broth Recipe)
2 C Milk of choice (I typically do 1/2 Coconut Milk and 1/2 Whole Milk)
SERVE WITH: Crusty bread, crackers, and/or shredded cheese.
METHOD:
Heat a large Dutch oven to medium heat.
Brown up the ground beef, but don’t drain any of those yummy juices and fats! Add the salt as the meat browns.
While the meat is browning, roughly chop the onion, sweet potato, and carrots into small bite-sized pieces.
Chop up the dill and set it aside.
Add the onion and ghee to the meat. Let the onions soften for about 5 minutes. To speed this up, cover the pot.
Add in the sweet potatoes and carrots. Mix them around.
Add in the mustard and black pepper. Mix to combine.
Next, add the bone broth and dill. Stir and let it cook for 30 minutes on medium-low with the lid on. Stir occasionally.
Check to see if the sweet potatoes and carrots are soft. If not, let it cook for another 10-15 minutes.
Lastly, add in the milk and stir. Let it combine for 5-10 minutes.
Serve with crusty garlic bread or crackers. Sprinkle some raw cheese on top if you’d like — go wild! Enjoy!
